What am I looking forward to this weekend?Sunny scenes with warmer weather forecast.
Perusing the fascinating bulk-food bins in an old-fashioned health food store.
Baking bread.
Eating some more delicious strawberries!
Living life, our life, the one we’re enjoying right now.
Finding beauty in the everyday.
What are you looking forward to?
These cookies are so delicious, especially if you still have one big Mason jar of strawberry freezer jam from last summer….
Since there are two of us in the household, I’m always on the search for smaller desserts. I’ve begun to make 1/2 of most cake recipes, so if it’s supposed to be a layer cake I’ll make only one layer, but sometimes it’s difficult to make a half-batch of cookies. Maybe it’s more my lack of cookie willpower getting in the way than any difficulty with the recipe….
Anyway, this recipe makes a smaller amount of cookies than usual, about 15 medium-sized cookies. And you can use any jam or jelly you want.
Preheat the oven to 350F.
Beat the butter for several minutes with a stand or hand-held mixer. Add the sugar and beat several more minutes until the butter-sugar mixture is light in color and very fluffy. This beating process makes your cookies super light and fluffy!
Stop beater, scrape down the sides, and add the egg. Beat again for a few minutes until the egg is completely incorporated.
Meanwhile, sift together the flour, salt and baking powder. Mix gently with a spoon or whisk until well combined.
Using a rubber spatula and gentle strokes, combine the flour with the butter-sugar mixture until well incorporated.
Roll the dough into golf-ball size balls, and place on a cookie sheet covered with a Silpat or parchment paper. Press one finger into the dough to make a hole almost down to the bottom. Fill the hole with a little jelly or jam.
Bake for about 14-16 minutes, until the bottoms are lightly golden and the tops are starting to color. Remove from oven and carefully transfer to cooling rack. After just a few minutes you’ll see the jam deflate in the cookies; add a little more jam to each cookie until it’s flush with the top.
Enjoy with coffee or tea, they’re a perfect afternoon or evening treat!
…or maybe a cookie.
… or maybe a hug.
…or maybe a smile!
I sometimes get a little like, “hey, no one made me a homemade batch of cookies today or a loaf of bread, or just ran up to me on the street, a perfect stranger, and gave me a hug” (okay, that one might be a little creepy)….
But if I find myself thinking like that, what I do is make something for someone else.
A batch of chocolate mousse.
Or some homemade oatmeal-date cookies.
Or give them a hug.
And somehow, I always feel better.
The markets are a little split-personality these days, just like the weather. Things are warm and summeresque one day, and cold and misty the next. The markets are reflecting that, with both winter and spring produce.
Here’s the winter produce. The beets and carrots look just alike:

Then we have the dried fruits and the locally-produced olive oils, yum!

This is right next to the most beautiful, soft, thoroughly red, tasty, firm strawberries:
sold by the rainbow-apron-lady:
No matter what days are your favorites, the cold ones where you make soup with turnips and carrots, or the hot ones where you dine on strawberry shortcake, the market has what you need!
Ah, the charms of frozen fruit….
If you have a banana, a handful of frozen fruit, and a few oranges, you are in business! Here’s a great breakfast that’s so easy you’re probably already making it yourself. Just in case you’re not, here’s a recipe you can adjust to your preference.
Toss all ingredients into a blender, a food processor, or a stick-blender cup, and process until smooth. You can add a splash of water or more orange juice if things get too thick for your liking.
Enjoy!
Does it ever happen to you that when you take your camera along on a walk, you notice about 10,000 things more than you normally would? Well, that’s what happened to me, and here’s my new neighborhood!
First off, this bird greeted me on our street.
They really do look like birds!
Our neighborhood is more eclectic than the last, as evidenced by our neighbors’ choice of lawn ornaments:
I really like them, especially the uncomfortable-looking metal tractor seat.
Oooh, who’s this?
A cute little pony! Or is that a miniature horse? I don’t know….
This big planting of daffodils is what made me bring along the camera in the first place. They’re just shouting, “Hi! How are you!!?” to everyone who passes by.
Wow, what a beautiful oak tree. There are so many of them around here, including our front yard! It’s just like camping without leaving your home.
Did I really take a picture of the sun? Why didn’t it break my camera? Anyway, here’s more of the beautiful trees. This is the hiking trail near our house.
Back to the neighborhood… the way these flowers grow always reminds me of fireworks.
Here’s an awesome yard with a little Japanese flair. That tiny red bridge just takes it over the top.
I wish you could have smelled the air… it was scented with several kinds of jasmine. I couldn’t get any good shots of jasmine, as people had smartly planted them right near their houses to maximize their own pleasure and I didn’t want to go tramping up their yards to take a picture. Well, let’s put it this way: I wanted to, but I didn’t. So I’ll leave you with this last picture of these beautiful flowers.
Happy Friday!
Today is your own day to make of it what you will.
What does today hold? Only what you make it.
It’s difficult to do everything we want to do, in the press of modern living which seems to be ruled by clocks, schedules, meetings, traffic patterns.
Take a moment for yourself today, to breathe. Breathe, and smile.
Today: it’s the only today you have, you have only one chance to make today what you want. Have a good one.
